A New Recipe?

Abby wanted to make a dessert yesterday, and by golly, a dessert sure sounded good to me. So, Abby went in search of a yummy little recipe and came up with this cake.

Now, I’ve heard the cake she found called many things…some of which are not appropriate here, but the recipe title on her dessert was “Toffee Carmel Poke Cake.” (That is so much more tasteful than what we called it in college when I was first introduced to the cake.)

Anyway, off Abby went to the kitchen.

About a half hour later, the timer went off and the cake was done. I walked into the kitchen to see if Abby needed any help and I was a bit surprised when I saw that the cake had not risen much. As in not at all.

“Abby, did you add the eggs?”

“Yes.”

“Did you add everything the recipe [a.k.a. box] called for?”

“Yes.”

“Are you sure you baked it long enough?”

“Yes.”

“Hmmm…It’s just that this cake didn’t rise very much.”

Could it have been an old cake mix? I wondered to myself. (Surely not in my kitchen. Hee hee.) Was the oven working? Well probably, unless all the charred remains that lie at the bottom of my oven had somehow caused a malfunction. This caused me to think about cleaning out my oven, but thankfully that thought passed quickly.

As these thoughts were racing through my head, I pulled out the cake mix to see what could have gone wrong. And I’ll be darned if it wasn’t a brownie mix. That explained everything! What a relief. I didn’t have to clean my oven after all.

But Abby was not relieved. In fact, she was done right devastated. But I assured her it was no big deal and I thought we should just try it with the brownies as if it were a chocolate cake. And guess what, they were delicious. As in the pan was gone in less than 24 hours.

So, if you’re looking for a little something sweet today, whip up a brownie mix, let it cool, poke a bunch of holes in it, spread caramel topping over it and then top that with cool whip. Then crush some Heath bars and add them to the top and, voila! Dessert is served. (You’ll want to keep it in the refrigerator if you don’t eat it all the first time.)
