My freezer is dangerously low on beef right now. Something a cattle rancher should never let happen, but we took a steer to the locker last week so I should be able to remedy that problem shortly. In the meantime, here are some more meal ideas for you to try this week.

I am using up the last packages of beef in the freezer, but I just can’t bring myself to prepare the liver. Yuck. That is strictly used for fishing bait around here. But if liver and onions are one of your favorite dishes, you can add that to your menu!


Patty Melt
Oh my. I love patty melts. A hamburger patty with melted cheese and caramelized onions on toasted bread. What more could you ask for? Serve it with fried potatoes and steamed asparagus for a delicious supper tonight!


Chili
Nothing warms you up on a cold day better than a bowl full of chili. There are so many wonderful recipes out there you can really go about any direction with this meal. My chili is more “a can of this and a can of that.” I like to brown my hamburger, add chili beans, diced tomatoes, tomato sauce and seasonings. And, if you’ve got a busy evening, this is something you can throw together in the crock pot and let it simmer all day.


Enchilada Casserole
I’m too lazy to make actual enchiladas, but I love to make enchilada casserole. In fact, this is a recipe I make to use up my leftover roast. I just shred my roast beef and add a can or two of enchilada sauce (depending on the amount of roast beef) and a can of diced tomatoes with chili peppers. Then I layer tortilla shells, the beef mixture, and cheese (repeating the layers until I run out of beef) in a 9 X 13 deep-dish pan and bake it at 350 till bubbly. You can add all sorts of things to this. Jalapenos, corn, green onions, black olives, corn chips…the list goes on and on. Enjoy!


Beef and Sugar Snap Peas Stir Fry
Wow. Gorgeous. You can always switch up the veggies or use chicken or pork. But beef stir fry is a favorite of mine. Thinly sliced sirloin with a package of sugar snap peas and your favorite sauce and you’re good to go. Serve it over rice or noodles and it’s a One Dish Wonder for sure.


Call me crazy, but sometimes I like to have breakfast for supper. And right now, nothing sounds better than waffles, sausage, and eggs. Scrumptious! And have I mentioned that if you’ve never tried beef sausage, now is the time. It melts in your mouth.
Well, now I’m suddenly very hungry. Maybe I’ll go have a little chocolate to tide me over till lunch.
