(Note from Bon: I’m sorry we’ve slacked off in the “Monday Meals” category! I’m hoping to get back in the swing of things but here are some yummy snacks Heather makes to tide you over:)

Somehow I am usually in charge of the appetizers for a family get together. I haven’t found out yet, because I always make them, but if I forgot, I think Uncle Clint at least wouldn’t be happy. Although they are the easiest thing to make, and I know he could bring them if I did forget. But if he sticks to bringing the meat he smokes then I think I can handle always remembering to bring the appetizers.

Pickle Wraps

These are the easiest thing to make and they go fast. Just sliced ham, softened cream cheese, and pickles. Wrap them and then slice into bite size, YUM!

Tortilla Taco Wraps

Soften 8oz. of cream cheese; add half a package of taco seasoning. Then I add half a jar of chunky salsa to the cream cheese mixture, spread on tortilla, wrap and put in fridge for a couple hours before slicing them.

Bacon Wrapped Lil Smokies

The Pickle Wraps and Tortilla Wraps I make all the time. The rest I don’t make that often because I don’t usually have everything I need all the time. These are just a package of lil smokies, brown sugar and bacon. I cut each bacon strip in half and rub brown sugar on each piece then wrap the lil smokies. I sprinkle a little more brown sugar on top and then bake till the bacon is done.

Shrimp and Pineapple Wrapped in Bacon

My brother made these for Thanksgiving one year; he is the appetizer guy when my side of the family gets together. I buy the frozen shrimp and thaw it out, stick a chunk of pineapple in the middle of it and wrap it in bacon. Bake until the bacon is done.

Jalapeno Poppers

I just realized the reason I don’t make the last three all the time. I would be going through a lot of bacon if I did!

Here recently I have been making the poppers any chance I get. I can’t taste much anymore since I had that surgery, so if it’s not really salty or really spicy I can’t taste it. These are both! The bacon is nice and salty and since I canned the jalapenos they are a lot hotter than normal. Perfect for me but everyone else is jugging milk after having one. I just slice the jalapeno, put cream cheese in it and wrap with half slice of bacon and bake till done.

These are not anything new and most of you have made them or eaten them at some point, but just in case you haven’t, now you won’t be missing out! They may not be healthy but boy are they yummy!
