Growing up, we had beef sausage for meals and I didn’t think anything about it. I assumed everyone ate beef sausage. It wasn’t till I was much older that I realized most of the civilized world ate pork sausage. In fact, no one had ever heard of beef sausage. So if you are in the camp of people who have never heard of beef sausage, I’d like to introduce you to it.
Beef sausage is delicious. It has a deeper, richer, beefier flavor and, in my completely unbiased opinion (lol), it is far tastier than pork sausage. I love it! You can use it interchangeably with pork sausage and the ways in which you can use it are only limited to your imagination.
I’ll list a few of my favorite recipes to get you started.
Freddy Egg McMuffins
We have these all the time and they are quite possibly Will’s favorite breakfast item. Just form a sausage patty as thin as you can, fry it in a skillet (it only takes a couple minutes a side), fry an egg, top it with cheese and put it on a toasted English muffin. We like our eggs over-easy, so it is a bit drippy, but believe me, it is worth it. Now, we also like to top the English muffin with peanut butter and jelly, but if that’s too crazy for you, you can skip that part.
Beef Sausage Gravy over Biscuits
Here is another go-to breakfast meal. Brown your beef sausage, add a can of cream of mushroom soup, then fill the empty can about 2/3 full of milk, swish it around to clean out the can, and add that to the skillet. Add salt and pepper and cook till bubbly. Serve over homemade biscuits and enjoy. Or you can pop some biscuits from a can like I do. Or use Grands frozen biscuits; those are yummy, too. Or you can make your own white sauce and use that. The choices are endless!
Beef Sausage Breakfast Burritos
Next up is beef sausage breakfast burritos. These are very simple and very good.
For these, just scramble some eggs, brown some sausage, grate some cheese, add some salsa or anything else that sounds good and breakfast is served. Delicious!
Beef Sausage Balls
Despite the slightly risqué name, these little guys are delicious. Mom makes them for brunch and they are super simple. Just roll some one-inch sized balls and cook them in a skillet till they are no longer pink in the middle.
And a variation to this, and this is what I do 90% of the time, just brown and crumble the beef sausage and serve it that way. I find myself standing at the stove eating it straight from the skillet. It’s just that good.
Beef Sausage Pizza
Beef sausage isn’t just for breakfast. A beef sausage pizza is a hearty weeknight meal and you can spice up the toppings however you would like. Maybe some green peppers and onions. Or mushrooms and pepperoni. Whatever sounds good!
And one more idea before I end…beef sausage burgers. Mom actually came up with this recipe by mistake as she was making lunch for the vet and crew working in the barn and she brought out beef sausage burgers. She thought she was bringing out regular hamburgers, but she had accidentally grabbed the wrong package from the freezer and prepared sausage burgers instead. However, they were very tasty!
So next time you get a calf processed or are at the grocery store, ask for beef sausage. You may get a strange look, but just explain that you would like to use ground beef as the base for the sausage instead of ground pork.
